THE PRODUCTION
The production line turns out about 2 tons of dough every hour, and three forming lines ansure an output of 1,000,000 items in two shifts. Nuova Ruggeri specialises in the production of non-standard-size croissants to meet specific customer requirements. For three years now, Nuova Ruggeri has been a member of the European Private Label Manufacturing Association, which groups all private label manufacturers selling to major Italian and foreign retail chains.
THE QUALITY

Nuova Ruggeri has focused primarily on the quality of its products. To this end, the company has its own modern QC chemical and microbiological test laboratory so that thorough checks and inspections can be carried out on in-coming raw materials and finished products. An in-process cricital-point monitoring system (HACCP) is currently operational to prevent all health and hygiene risks in compliance with European directives EC 93/43 and 96/3. The tests carried out are more rigorous than prescribed by current regulations because Nuova Ruggeri is implementing a quality system in compliance with UNI EN ISO 9002 and has set itself the goal of obtaining certification by the end of 2001.
